Baked Matzo Meal Chicken Nuggets

I don’t know about you, but we bought far too much matzo for Passover earlier this year.  As a result, we are still working through the excess in the form of various dishes.  One fun recipe for using up your leftover matzo are these easy, baked chicken nuggets.  A great healthy option for kids (or adults like us) who crave fast food, these nuggets are not fried and don’t include eggs.

Instructions
  1. Preheat oven to 450° F
  2. Cut chicken into 1 – 1½ inch chunks. Place in a bowl.
  3. Mix matzo with seasonings.
  4. Pour matzo and seasoning mixture over chicken and mix well to coat.
  5. Place chicken evenly on a baking sheet.
  6. Spray chicken with Pam to coat.
  7. Place baking sheet in oven and bake for about 10-15 minutes. The chicken should be evenly golden-brown.
  8. Allow to cool before serving. Serve with your family's favorite dipping sauce (ours is equal parts ketchup and a spicy BBQ sauce).
