don’t know about you, but we bought far too much matzo for Passover earlier this year. As a result, we are still working through the excess in the form of various dishes. One fun recipe for using up your leftover matzo are these easy, baked chicken nuggets. A great healthy option for kids (or adults like us) who crave fast food, these nuggets are not fried and don’t include eggs.

Pour matzo and seasoning mixture over chicken and mix well to coat.
Place chicken evenly on a baking sheet.
Spray chicken with Pam to coat.
Place baking sheet in oven and bake for about 10-15 minutes. The chicken should be evenly golden-brown.
Allow to cool before serving. Serve with your family's favorite dipping sauce (ours is equal parts ketchup and a spicy BBQ sauce).
