This recipe is from a guest post by Laurence Makano. While her recipe contribution is not kosher, in can be if you were to substitute the bacon with pastrami, duck bacon, or beef bacon, and pair it with a vegan camembert (add about 15% coconut for melt-ability!) or daiya cheese.

Brie, Bacon, & Apricot Grilled Cheese

Cook bacon and let rest for a few minutes.
Mash and spread apricot on slice of bread (yes, you can spread on both slices if you want).
Add slices of brie and the cooked bacon and sandwich together.
Liberally butter both sides of the sandwich on the outside and cook, covered, over medium heat, flipping halfway through until the bread is browned and the cheese is melted (if the cheese still isn't melted all the way, sometimes I just take the sandwich apart and put the cheese directly on the pan for a few seconds).
Laurence used a panini maker to help melt the cheese, but you can do it in a pan or skilled. Your choice!
