Moroccan Inspired Baked Chicken

This is a recipe creation I came up with which turned out surprisingly delicious!  I used neither a recipe for inspiration or any number of my “flavor combination” books, but a simple memory of some flavors I happen to like and have on hand.

Instructions
  1. Pre-heat your oven to 350°F/176°C.
  2. In a small bowl, combine the cumin, coriander, allspice, harissa, and margarine.
  3. In a pan with a small lip (to contain the juices), cover chicken in the mixture.  Place in oven and roast for 40-45 minutes or until done.
  4. Garnish with parsley and serve with a starchy side!
