Harissa Baked Chicken
boneless skinless chicken thighs
bone-in, skin-on is nearly always a better choice, but I am forced to use boneless, skinless or face the wrath of my fiance’s whining 🙂 (I love you, honey!)
chopped parsley or chives
Pre-heat your oven to 350°F/176°C.
In a small bowl, combine the cumin, coriander, allspice, harissa, and margarine.
In a pan with a small lip (to contain the juices), cover chicken in the mixture. Place in oven and roast for 40-45 minutes or until done.
Garnish with parsley and serve with a starchy side!
