Arrange sliced lemons on the bottom of the slow cooker.
On top of the lemons, create a roasting lift: using balled up pieces of foil, smush them into patties about 1 inch thick to raise the chicken from the pan. Alternatively, you could use onion sliced an inch thick.
Generously season the hens and place on top of the roasting rack you created.
Cook on LOW for 8 hours or HIGH for 4 hours.
